I would like to see possible interactions between polysaccharides and peptides. Also aldehyde and polysaccharides.

Which peptides are you referring to? There are a huge number of different compounds and each can have fairly different interactions and effects. For example to name a few - CJC-1295, BPC-157, GHK-Cu, these each have very different metabolic functions in the body, hard to answer this question without knowing the specific peptide in question.
